Conceived at the now-defunct but eternally beloved St. Dames restaurant in South Seattle and perfected in my kitchen- with the crucial feed back of a select panel of hard working sauce tasters- these sauces and shrubs epitomize the very qualities you crave. Spicy chile pepper-based sauces and shrubs are not inherently part of my ethnic heritage. I am grateful to the indigenous peoples of Mexico, Central and South America, the original cultivators of the spicy crops which provide me (like the rest of the world) with so much delicious pleasure. Many global cultures have riffed on these spicy origins, bringing us all to a tasty place in time. I've been creating food and beverage recipes throughout an extensive career as a line and pastry cook, bartender, baker, bar back, server, and restauranteur. From the flagship sauce to spicy shrubs to seasonal sauce blends, creative stimulation is the name of the Hot Dame! game. Lightly fermented from fresh ingredients with no stabilizers added and no heat treatments, please store in the fridge and give a gentle shake (or roll, maybe even a rock and a roll) before serving.
